Important considerations before making wake and bake dishes

Best wake and bake recipes to start your day off right

Many cannabis users swear by the wake and bake method, claiming it puts them in a positive mindset, provides them with a boost of energy, and helps them stay creative and focused. But there's a fine line between getting the right amount of buzz to tackle the day ahead, and getting so stoned you want to slip back under the sheets.

Here are a few tips to help you wake and bake responsibly using cannabis edibles:

  • Get your dose right: Most people find small doses of cannabis to be invigorating and energising, and large doses to be relaxing and even sedative. Take the time to find the dose that works best for you. When in doubt, start small and work your way up to a higher dose gradually. Especially with edibles, a little goes a (very) long way.
  • Pick the right strain: Cannabis is a complex plant with hundreds of active compounds, and what makes one strain energising and uplifting, and another deeply relaxing, comes down to a lot more than just the age-old indica/sativa divide. When using cannabis, keep track of how different strains make you feel, and select a variety according to what effects you're looking for in the mornings.
  • Experiment on your days off: If you're new to cannabis, or new to edibles, it's a good idea to familiarise yourself with the wake and bake process on a day off, before attempting it during a day filled with activity or important tasks. While seasoned stoners make it look easy to go about the day under the influence of cannabis, some people, especially novices, can struggle to stay focused and productive when high. Pay close attention to how cannabis makes you feel, and use it accordingly.
  • Keep it healthy: No routine is healthy if it turns into an uncontrollable habit. Waking and baking should have a positive impact on your life. If it's not, stop, and seek out healthier ways to incorporate cannabis into your routine.

Wake and bake donuts

Got a sweet tooth? What better way to curb your morning sugar cravings than with delicious, homemade cannabis donuts? Enjoy them on their own, with a cup of tea or coffee, or spice them up with your favourite fillings.

Ingredients

  • 2 eggs
  • 50g (¼ cup) powdered sugar
  • 2¼ tsp. active dry yeast
  • 480ml (2 cups) neutral oil (canola or vegetable work great)
  • 1 tsp. salt
  • 850g (4¼ cups) plain white flour
  • 300ml (1¼ cups) milk
  • 115g (1 stick/½ cup) butter

For the glaze:

  • 400g (2 cups) powdered sugar
  • 1½ tsp. vanilla extract
  • 4 tbsp. hot water
  • 65g cannabutter

Note: The above recipe makes roughly 12 glazed donuts, with the cannabutter added to the glaze. If you prefer, you can leave out the glaze and add cannabutter directly to the dough mixture. In this case, use roughly 80–90g of regular butter and 25–35g of cannabutter in the dough, and follow the same instructions as below.

Hardware

  • Small pan
  • Electric mixer
  • Large bowl
  • Plastic wrap
  • Rolling pin
  • Baking tray
  • Large pan
  • Cooling rack
  • Slotted spoon

Directions

  1. Heat the milk in a small pan over low heat until warm. Remove from the heat and add in the yeast. Stir and let it rest for about 5 minutes. The mixture should be foamy, indicating that the yeast is alive.
  2. Add the milk and yeast mixture to a bowl, and add in the sugar, butter, eggs, and salt. Using an electric mixer, mix gently until combined, then add in roughly half the flour. Mix until well combined before adding in the rest of the flour. Continue mixing until the dough has combined and easily pulls away from the sides of the bowl. NOTE: The mixture may become too firm to mix with a domestic mixer. In that case, move the dough onto a clean, floured surface and knead it until smooth. Put the finished dough into a greased bowl or tray, cover it with plastic wrap, and let it rest at room temperature for 1 hour (or until doubled in size).
  3. Move the risen dough to a floured surface. Use a rolling pin to roll the dough until it's around ½ inch (1.2–1.3cm) thick. Cut out your donuts using a donut cutter or two cookie cutters (the larger of the two should have a diameter of roughly 7.5cm or 3 inches).
  4. Combine the excess dough left over from making the holes in your donuts, and repeat step #3 while being careful not to over-knead.
  5. Place the donuts on a floured tray, cover, and let rise in a warm spot in the kitchen for roughly 30 minutes. Make sure to leave sufficient space between the donuts so they don't stick together as they rise.
  6. Let your donuts rise for another 15 minutes while you gently heat your frying oil to 190°C in a deep, heavy bottom pan. Also, line a cooling rack, baking tray, or plate with paper towels.
  7. Gently add a few donuts to the hot oil. Make sure not to add too many at once to avoid them sticking together in the pan. Cook for roughly 45–60 seconds, until the bottom of the donuts are deep brown, then flip and cook the other side for another 45–60 seconds. Use a slotted metal spoon to remove the cooked donuts from the oil and transfer them to the cooling rack. Repeat until all of your donuts are cooked.
  8. To make the glaze for the donuts, combine all of the ingredients in a bowl and whisk together until smooth. Once your donuts have cooled, dip them in the glaze and let them rest until the glaze has hardened. Enjoy!

Want to make filled donuts? Simply don't cut holes in your donuts in step 3, and use a jam syringe to pump them full of your favourite filling once they have cooked and cooled!

Weed granola

Looking for a healthier weed-infused breakfast? Granola is naturally rich in protein, micronutrients, and vitamins. Plus, with this simple recipe, you'll be able to infuse your favourite granola mix with a long-lasting cannabis kick.

Ingredients

  • 800g rolled oats
  • 100g brown sugar
  • 400g nuts (chopped walnuts and pecans, whole pistachios or hazelnuts, and sliced almonds all work great but feel free to experiment)
  • 400g dried fruit (blueberries, raisins, cranberries, bananas, and dates are all excellent choices)
  • 100g white chocolate or dark chocolate chips (optional)
  • 100g sunflower seeds
  • 1½ tsp. cinnamon
  • ½ tsp. salt
  • 60ml (¼ cup) maple syrup
  • 120ml (½ cup) honey
  • 120ml (½ cup) cannabis-infused coconut oil

Hardware

  • Large bowl
  • Large spoon
  • Baking tray
  • Storage container

Directions

  1. Combine all of the ingredients together in a large bowl, and mix well.
  2. Spread the mixture out evenly on a lined baking tray.
  3. Bake for 30–45 minutes at 160°C. Stir at the halfway mark.
  4. Remove your granola, let it cool slightly, and enjoy.
  5. Store leftover granola in an airtight container in a dark, cool part of the kitchen.

Cannabis breakfast skillet

Are you more of a savoury breakfast person? This cannabis breakfast skillet is packed with hearty ingredients and, of course, a weed-infused kick, to help you fuel up and tackle the morning, coffee in hand.

Ingredients

  • 2 medium potatoes
  • 100g (½ cup) chopped bacon
  • 2 eggs
  • 100g (½ cup) shredded cheese
  • 1 tbsp. cannabis oil
  • Salt and pepper to taste
  • Hot sauce (optional)

Hardware

  • Grater
  • Large bowl
  • Cast iron skillet or stainless steel pan
  • Clean dish towel
  • Plate for bacon

Directions

  1. Wash and shred your potatoes.
  2. Place the shredded potatoes in a large bowl, and rinse them under cold water to remove the excess starch. When the water becomes clear, dry your potatoes thoroughly in a clean dish towel.
  3. Place a heavy cast iron skillet on medium heat, and let it reach temperature.
  4. Cook your chopped bacon in the skillet until crispy, then remove and place on a plate lined with paper towels.
  5. Add cannabis oil to the bacon grease in the skillet, followed by your washed, shredded potatoes. Note that the potatoes need to be well-dry or they'll make the oil spit when you add them to the skillet.
  6. Cook the potatoes on medium-high heat, tossing regularly and seasoning to taste with salt and pepper. Add in your chopped bacon bits, combine, and continue cooking until the potatoes become golden brown.
  7. Bring the potatoes and bacon together on one side of the skillet to form a rosti or hash brown, and cover with shredded cheese.
  8. Crack 2 eggs into the skillet and season them with salt and pepper. Cover the skillet for 1–2 minutes so the egg whites cook evenly and the cheese melts.
  9. Finish off your eggs with a splash of hot sauce, and enjoy!
